Look's nice & I will take into account your beginner comment as this cook can be accomplished on a regular kettle. Although I don't own a Kamado style grill, I understand how they operate with respect to fire management. You have a very special grill & with the insight of others on this forum you will be cranking out all sorts of special dishes, take some notes & continue to post your results, best of luck.
 
Nice...enjoy. I absolutely am still in love with my S6 and love cooking on it in - it's 4th year. I purchased a second charcoal grate for the upper level and that was probably my best accessory purchase for it as well. I do a LOT of cooking with lump charcoal on the upper level....sort of SnS format where half of the cooking grate is searing, and the other half "cool" for coming up to temp....
