Brand new 22.5

Ive been reading up on the site and I was pleased to get my hands on a new 22.5. Did my first cook on it this weekend for the Talladega race. Ran a little hot, but still easy to control. Love this thing.

Welcome to the site and congrats on getting the "cooking beast". Your ribs look really good but the 22 is just too clean.

Congrats on the new WSM and welcome to the forum. As your WSM gets seasoned and a bit dull looking on the inside from smoky cooking goodness, it will not run as hot.

Those ribs look good. Keep on cookin'!

will, you have waaayyyyyy too many racks of meat on that thing, you need to send me some of the ribs to make CERTAIN the Weber is working properly.

I'm new here too and just breaking my 22.5 in as well. It was running hot so I took out the water pan and covered the top grill with chicken parts over charcoal with the dampers set low so no flair ups. That one cook of about an hour seasoned it up just fine. Did a picnic shoulder on the weekend and it ran a steady 260.
