I've gotten to the point where I pretty much nail BRITU ribs every time and prefer them unsauced. I really like 'em but I'm looking for a change. I've got 2 racks of St Louis in the fridge and am ready to mix it up. What other recipes should I try? I'm thinking one marinated and one sauced. All suggestions considered.
 
Have you been doing the full BRITU recipe, meaning how you fire the smoker and the rub. If so, then I would get intimate with the minion method of lighting. You will need to learn and understand that for other long cooks.

For a rub, I would try Meatheads Memphis Dust, let them sing along 250-275* until tender and sauce on the side.
 
Humm...I would do a rack with only coarse salt/black pepper. Glaze with honey the last 20min. You will get a taste of what you are eating(pork)...And not just all the rub. If you like it(witch i bet you will) Add garlick and other stuffs to fit your taste. AKA the Rick Rack!(no one can take that away from ya)
