Kemper,are we looking down into a wsm? I've never done a cook over open coals before. I always use my clay saucer.I guess I'll have to put more faith in "Marie". Good looking chick. And banana pudding too! Man that bowl would have never made it to the table!

Alan, try cooking chicken especially Roadside Chicken using a WSM without the water pan and high heat 350+. The juices from the chicken flare up but can't reach the chicken, giving it a great flavor. It's the only way I grill chicken now.
