Bluefish 1st attempt

After brining over night. Set up smoker with Weber fish rack and hung the fish.

Looks great Clifford. Gotta ask... Are those leaves at the bottom of the smoker? I know I'm going to regret asking that! How long did you smoke it?

My smoker is a weber performer with a WSM middle section and lid. That is a picture of the middle section on the ground when i loaded up the hanging rig. I smoked it at 200 for about 2.5 to 3 hrs...

Hooked into a couple of bluefish a while back near Chatham. BBQ over charcoal just swell so I would imagine smoked even better. Nice oily fish.

Clifford your Blues look real good. We don't have them in Lake Michigan but every once in a while a smoked Coho is pretty good too.

Oh , so you have 22.5 wsm and it fits performer base snugly? I didn't know that.
