Thanks to everyone who gave me tips to smoking this bear roast, and thanks to Scott Hollister for the Yum Yum Steak Seasoning rub recipe, went excellent on the roast. Also threw on some goose breast, abt's, ribs and smoked baked beans while the roast was smoking away. Here's some pics:

Nice post. Dig seeing some of the less typical proteins.
 
I'm with Tony, never seen it cooked before. How did the end product come out? Does it taste like any other meat?
 
Thanks everyone! Roast came out awesome. Was a little nervous cooking it but it turned out great. I brought it to 195* IT and let it rest almost an hour foiled before shredding it up. Shredded very easy just like a pork butt, very tender and moist with a beautiful smoke ring. It was a little sweeter than beef with a nice slight heat from the rub, that was by itself. Then I mixed it with some doctored up Sweet Baby Rays (a shot of JD and some coca cola) and it was phenomenal, everyone raved about it. Will definitely make it again!!!
 
Tell me more about this doctored up SBR? I've never heard of JD and Coke in there. I may have to give that a go and try for myself.

I use somewhere around 1/3 of a 40oz bottle of Sweet Baby Rays Bbq Sauce, 2 1/2oz's Jack Daniels Whiskey and just add Coke until it's to a consistency that's fairly thin but not watery. Adjust any of the ingredients to suit your taste, I eyeball everything except the JD. At first it seems like it won't mix together but just keep stirring and it will. I use this for all my rib cooks and everyone loves it, had some leftover so I tried it with the bear and it was excellent. I usually do three coats on my ribs and let it set for 10-15 minutes between coats. Hope you enjoy it!!!
