Put some rub on:
Midnight Brisket Rub

1/8 cup salt
1/8 cup black pepper
1/8 cup paprika 1 TBSP granulated garlic
1 tsp dry mustard
Set up the Firefox with the dry foiled clay method at 250 deg and put it on at 10pm, separated the flat and re rubbed were they were attached at 12pm. Put the point on the bottom rack and foiled the flat and put back on the top rack for 45 min.
The best smoke ring on a flat I ever done, didn't get pics. Camera batt was dead and folks were waiting with plates in hand.
Pulled the point at 2pm, wrapped in foil and towels then chopped/ pulled at 6pm.
What a hit with the company.
