Big Ol' Chops

Got some chops from my new meat source. While they don't raise pork themselves (just beef, lamb, and poultry), they do work with a nearby farm. So I ordered a couple chops:

Mind you, there were only two chops in this pack. These were THICK.

I salted them while i got the performer started. Seasoned them up with a rub from Rita (which I now cannot find), consisting of ground coriander, mustard seed, fennell seed and black pepper. Added a dash of garlic powder to the mix and threw them on. Here they are after being moved to the cooler side of the grill:

I then took them off for a brief rest:

Finally plated with a simple salad and some home made peasant bread:

I overcooked 'em a tad, but they were still the best chops I've had, thanks to my Performer, Rita's rub, and a good upbringing.
