Big Bird & Borin' Brats

Sunday Chicken on a beautiful warm afternoon.

Marinated the 4.5 lb'er overnight in Wicker's then seasoned with Penzey's Old World.

Then the temp outside dropped as it sprinkled rain droplets.

Again, cookin' this bird high above the hot Kingsford using the 22" WSM without the water pan.

the skin did suffer a bit...

near the completion of the bird, more cacti followed...

...butt nothin' was happening being so far from the heat...
so the bird was removed to rest and the WSM mid-section was removed as well. Place a grate in place and...

The shé~cone was PERFECT! and the nopales and the spuds! No duds today!
Monday, laid-back borin' brats...
Started with sliced buttered onions and poblanos...

before i could get the brats on, the O's and P's were nearly D<span class="ev_code_GREY">one.</span>

Popped A Point...

...and turned the brats...

Everything looks real good!! But I have got to ask this, what does that Cacti taste like? Being from Northern Minnesota I can't say I've ever tried it.
 
Great looking food Jim! If you can find an old lid for a 22 inch kettle, just cut the rim off at you work and you will have a perfect seat for the wsm lid to connect it to the bottom. I've done it and it works great. Then you have a mini smoker and can even take it places.

it's VERY good!
and Jeff, if you're referring to the ugly brown cedar fence, it's covered with old bouys from all over this country.
Some from Washington, Florida, Maine, Massachusetts, even Galveston TX. butt none from Kentucky.
Yet.
