I still had a 5 bone rib slab from a whole Costco rib packer from last year.
Two bones went with another cook, and two boneless rib roasts remain frozen.
Started this cook with my limited edition Lampe Smoker Plate.

A shallow pan of water for a heat sink, and to catch the drippings.
I couldn't decide between McCormick's Montreal, and Penzey's Chicago Steak Seasoning, so I used both.
Cherry wood for smoke.
After about 5 hrs. low and slow the slab was foiled and put in a warm oven while the (not shown) potatoes baked.
I've eaten marinated artichoke hearts in salads, but never an artichoke.
One medium choke, boiled for 15 mins. in water with lemon.
A baste/dip of evoo, minced garlic, lemon juice, and s&p.
Then grilled direct.
I loved it!
Jo Anne wrinkled her nose after a one leaf sample.
Jo was never too fond of beef ribs, so to hedge my bet I cooked a strip too.
Also brought the ribs back out to firm up.
There's some meat on these puppies!
Served straight up, no sauce to hide the big beef flavor.
Oh Mama, even Mama loved these!
If you can find a decent price on a whole bone-in rib packer, I say go for it.
It's easy to cut your own meaty ribs, ribeye steaks, and a rib roast or two from it.
