Beef Tenderloin

I saw this "beef loin butt" at the grocery and picked it up. Basically a piece of untrimmed beef tenderloin. I really didn't know what I was doing. I trimmed off all the fat and silverskin I could find. Then I tied it up, salted it, and applied a rub of garlic powder, onion powder, black pepper, and fresh rosemary. Asparagus was seasoned with S&P, herb garlic, and EVOO.

Smoked it with some hickory at about 300 for 45 to an hour until internal of 111. Off to rest while the charcoal really gets going to finish up.

Charcoal really hot now, so the tenderloin is back on to sear.

Tenderloin is off for a rest at 125, and the 'gus goes on.

I sliced the loin into inch thick steaks. I think this means my son likes it.

Wow Dale! Where have you been? Your cooking is awesome! Great looking meal! Need to see some more pics of your grilling set up cause what I have seen so far looks pretty sweet!
 
Hey Morgan, I been cookin' just not postin'. 90% of what I do, I learned on or was inspired by this forum. Chris has given us a real gift! I gotta dig up the pics I posted on the old discussion Chris used to have, Weber family or something? I will try to put them up tomorrow.
 
Yep me too! I agree this site has been a gift! Love to see some old cooks! I frequently go thru mine to get dinner ideas!

Awesome looking meal Dale! Yes this site is great. I'm all in!! Chris does a knock out job. Wish I would've found this 10 years ago but I'm glad I'm here now. Really good looking meal and way to go on taking a chance and stepping outside of the box, looks like a winner.
