6 fairly large beef short ribs seasoned with Simply Marvelous Peppered Cow.
Veggie mixture cut up and waiting for beef stock and ribs. The carrots were an extra that wasn’t
in the Pit Boys video.
Searing the ribs before going into the pan of veggies. Decided to use the Performer with Stubbs
Charcoal and a couple chunks of pecan and cherry wood.
Seared and ready to go.
4 hours and 30 minutes later, they were fall of the bone tender. Internal temp check revealed
they were at around 185 degrees. Performer stayed between 250 – 260 the whole time.

Absolutely a delicious meal! The short ribs were the best that I have done so far. Moist, tender
and a nice smoke ring. I did baste the ribs every 45 minutes and I believed this helped, besides
being braised in the beef stock.
