Today was a bit of a dress rehearsal for Thanksgiving. The turkey was seasoned with some poultry rub, then smoked in the SS red Performer at 275° using Royal Oak lump and northern beechnut wood. Unfortunately I can't provide any comments on the flavor because I caught a nasty cold from my 2-year-old, and have totally lost my sense of taste and smell. My family said it tasted good, so I'll take their word for it. Thanks for checking out the photos!
