Beans


 
I've been making Alton Brown's Once & Future Beans in my smoker for a few years (1 lb. of bacon.) Increase the liquid by a good 50% (I use chicken or vege stock,) and smoke uncovered for around 6 hours. Ideally, smoke under protein, but be careful..... I completely ruined a batch when the fat from the protein covered the pan and didn't allow for evaporation loss.

I'm planning on a batch for this weekend, I'll try to get pics before the hordes descend.
