Bean and Chorizo Burritos

A cook that didn't need to be cooked on the grill but it was a beautiful day and I like cooking outdoors so here we go:

About a half a pound of chorizo and half of a sweet onion cooked in a CI skillet


cooked a lb of dried pinto beans earlier in the day and added about 3/4 of them to the skillet


Mashed them with a potato masher and let them simmer in the grill for about 20 minutes


Warmed up a couple of burrito sized flour tortillas


Added the beans, smoked pepper jack cheese, and Hatch chilies


sour cream and Sriracha sauce


Time to eat!!!

Bean and chorizo are my favorite. My mother would make those and send us of to school. When maribel and I first got together she would pack me those burritos for lunch since back then we didn't really know how to cook a lot of meals.

Isn't it cool how so many memories are tied to food. I ate some freshly made Chicharrón recently and I started telling SWMBO about the way my grandfather made them.

Chicharron and cueritos freshly made are the best thing ever. My father would hire a guy to cut up the whole pork and do carnitas and chicharron .
 
The last picture of the string is just fantastic. Sums up the cook and really shows of how great the finished product.
 
For a person like you, this is probably normal food, but for me (GMT +9) is this absolutely fantastic!
