Bbq with Franklin


 
My cook went pretty well today. Of course they were calling for rain..... But it held off where I was. The little brisket took a little over 5 hours to reach 200 without wrapping. Probably would have cooked faster but I had other things going and opened it up too much. I basically cooked in that 240-270 range without water. Had a decent smoke ring and passed the pull test with flying colors. I've never been happy when I've wrapped a brisket so I'm set in my ways now I guess. The butt cooked in about 7 hours since I decided to wrap but I made sure to open it up at the end to firm up the bark.
