BBQ Class by Paul Kirk

I am trying to decide to go to a Paul Kirk Q class in Picayune Mississippi in October 2011.

I was told you will smoke chicken, ribs, butt and brisket. Also learn to make spices etc. No sauce covered in this class.

Its sounds like its well worth $250.

Any comments and suggestions welcome.

I attended years ago, once as a student and twice as an helper to the organizer. I cooked my first pork butt and brisket in that class. It's a good intro and I don't hesitate to recommend it to you.

David, I have been to a couple BBQ classes. For that price you are probably, as Chris wrote, getting a 101 class. Kinda depends on what you want and need at this point in you BBQ education. If you want a full blown comp course you are more likely looking at $350 +.
 
I would certainly like to attend a class like that to see how to work with some of the primary meats used in smoking.
 
Not to take anything away from Mr. Kirk, but you can get this and a heck of a lot of meat for $250.00...!

That's the first BBQ book I bought and it's good. I just got Ray Lampe's Big Time Barbecue book and it's good too. However, I don't think a book does as good of a job of teaching as an experienced teacher does but I've only been at this a year so I have a lot to learn. If I lived closer to Picayune I'd go. $250 sounds like a bargain for what you get.
 
Gerry, the KCBS web site advertises some classes. Some you have to go to the individual teachers web site. CBBQA also offers classes in Calif. Try a Google search for BBQ classes. Harry Soo of Slap Your Daddy BBQ offers classes in your area monthly.He is currently 8th in the TOY, KCBS rankings and has I believe 6 Grand Champ so far this year.
