Ok so I was inspired by J Biesinger's thread comp thighs, I finally did it!
Mine were no where near as pretty as his. But I must say very good. With thin tender edible bite thru skin. The skin stuck pretty good. I did have one that tried to come off all at once tho.
I followed his instructions as best I could make out.
Poultry rub then into a foiled alum pan with butter and a lil water skin side down for an hour. Then on the smoker with a fresh coat of rub. Smoked that bout 30 min. While I added no 5 to the aluminum hot tub pan. Brought that up to simmer then let cool and started basting the chicken bout every 30 min on the smoker till it just looked done. Still not to used to this smoker so I always use the water pan so I don't get in trouble. Maybe try empty next time? Either way I'll keep eating this crummy Q! Thanks for all your tips J!
