Barbecuing Woes, and my Manhood

I think you have plenty of info from responders on what to try next. I just wanted to say thanks for the post because picturing some guy kicking pork butt around the back yard made my wife and I laugh out loud.

My wife says to go buy the bullet and tell the kids that you fed the kettle so much meat that it grew into a WSM.

G Force- I would keep trying. I had a Weber gas grill for years before trying to use a smoker(ECB). I did ok chicken and ribs but temp control was a pain. After a year with the ECB, I got a WSM for father's day. The WSM is great. I have done some mighty fine(not great)pork butts on some overnight cooks with the WSM. The chicken and fatties are a fun short cook which always come out great. The ribs are real good but that is a work in progress.
The WSM was well worth the $200. It is easy to control.

Thanks again all:

This weekend I took my wife and daughters out to dinner. I broke the news that I need another cooking contraption. They took it quite well because I like to cook, and they get to enjoy my creations. Of course it cost me $180 for dinner to tell them that I need a $200 smoker, but that is how things work around my family!

I learned a few other things. Once I get the smoker (birthday in FEB), I will find a lot of support and friends on this board.

I also learned something about cooking. Upon Julia Childs death there were many famous chefs interviewed and one said Julia had a saying "never apologize for anything you put on the table", even if it is not your best effort, smile, and let them appreciate.

Well, once I was done kicking this butt around the backyard we actually did get some decent pickings off of it. Plus I tried a new (to me sauce) that was quite acceptable.

ps. No, I really did not kick the butt around the back yard. But it was close!
