Well, thanks, yet again, to Mr. Bob Correll!! I have made my first bacon! And it is just awesome!! No cooked pics. Only made 2 slices to test and they did not last long at all

My bellies after curing and sitting for a day:

Left one has just pepper on it. Middle I left natural, nothing added. Right one I added brown sugar to it.

And here is the "natural" piece after smoking and sitting in the fridge for the last 3 days mellowing out. Done with lump and apple wood:

Very tasty. A tad salty, but not over salted. Maybe could have rinsed a bit more. But man, the flavour is just fantastic! Great smoke taste and can definitely pick up the hints of the apple wood.

The other 2 pieces are in the freezer for using after this slab is done. Can't wait to see how those ones taste!

Can't wait to do another one very soon!!

I used lump and apple wood. Took longer than I thought it would have. Might have been due to the cold outside, but WSM held like a champ around 200-210. Not sure of exact time. Had to leave, so I pulled from the smoker and finished in the oven while we were out. With a probe that turns the oven off when it hits temp.
