Bacon Wrapped Stuffed Jalapenos

My family spent Christmas in Oxford, MS with my brother and sister in-law. My brother in-law has a performer, summit and 18 WSM so needless to say over the 4 days we fired up all 3! We both got a nice little Jalapeno stand for Christmas to cook stuffed jalapenos so we gave it a little test run.

We cored 18 jalapenos and stuffed them with cream cheese and bacon bits. We wrapped in bacon and cooked on the summit. Next time I am going to have to add some cheddar cheese to the mix but they were a very tasty snack!

We also learned the hard way to choose long, straight skinny peppers so they stand up in the stand better.

In my opinion if you eat stuffed peppers often it is worth the investment. Mother in-law gifted it to us so I am not positive how much they cost but I enjoyed it. The holes were a little small. As you can see in the pictures jalapenos were falling over after a while on the grill. I have seen guys stuff then skewer several peppers and make a make shift rack to hold up the ends of the skewers. That may be a low budget way to get the same effect. Wife and I like to stuff bell peppers and cook indirect till inside is melting then direct to give the pepper a little grill mark.
 
This is the way I've always done them.

The wife doesn't like them hot, so I cut and scrape them, fill them with my cheese mix, then half a piece of bacon.

It's easier just to lay them on the grill. I have a pepper roaster rack that does not get used anymore.
