Bacon Wrapped Stuffed Chicken Breasts

Wanted to try something different tonight, so I picked up a package of boneless skinless chicken breasts, spinach and Fontina cheese. First I sauteed the spinach in some EVOO with smashed garlic, and set aside to cool while I made some pockets in the chicken.



Then I stuffed them with the spinach and cheese



and wrapped them in bacon.



While the grill was getting ready there was time for a refreshment. The libation of the day.



On the grill, indirect at 350 with some Hickory and Apple for the smoke.



Almost there - brushed with a little Sticky Fingers Memphis Original



Resting



And your plate is served
