Thanks to all who have posted in the past and it helped me make this stuffed and bacon wrapped pork loin this a.m to go on for dinner tonight.
Cut the 4.5lb pork loin down flat and lightly covered with olive oil and a small amount of rub. I then covered it with sausage and pork stuffing with a sprinkling of Feta cheese on the top and rolled it up. Bacon weave was then placed over the outside and another dusting of my favorite homemade rub. Will throw on the smoker in a few hrs for dinner tonight and then sear it before resting to get crisper bacon coating.
Finally figured out laying the bacon weave on foil first and then using it to start and pull the bacon over the pork made it much easier than just rolling it over by itself.

Hope it will be good as its the first one I ever did this way. Will post pics of the finished product later.

Well its done and its all gone. My family really liked it but I feel the stuffing could have had more taste to it. The bread crumbs kind of overwhelmed the sausage a bit but will cut it down some next round. Cooked it about 3 hrs at 235-250 till it hit 150 and then seared over the coals to crisp up the bacon a bit. Let it rest about 20 minutes on counter before I sliced it. Slices and pork came off real juicy and tender so it was a nice change over the baked loins we used to make.
Overall I give it a approval for doing it this way. Unfortunately I didnt think of getting a sliced pic till it was too late.

That looks great. I just don't know that I'd have the patience to make one of those weaves. Props go out to you.
