Bacon Explosion at Work

I have been meaning to post this for a while so here I go.....A bunch of my co-workers have been talking about making this from scratch so I challenged them and brought my antique meat grinder in...which start to move this idea forward...so a lunch one day we all pitched in to get some pork shoulder, bacon, and chorizo. Here are some of the action shots: (Bacon weave,layer of seasoned ground pork, layer of ground chorizo, and bacon bits rolled)



This was done on a friday and sat in our frig over the weekend waiting to be put on the smoker. However, I dont have photos of the rolls finished.
Monday we had a smokey joe smoker brought in and the fun continued:

Jobo (our softball teams mascot) was wathcing over the outside activities:


One of guys also brought in some homemade Hungarian Sausage to add to the activity....loaded first:

Needless to say we feed about 30 people and nothing was leftover...which means it was a hit....I work with a great bunch of people who know how to cook and eat!
It was a great way to break up the work week during the winter months.

I think my mom had that same meat grinder. No really -- the exact same one. I recognize the dents. Great food. Love it all!
