bacon and foodsaver question


 
So i haven't bought my pork belly yet but i plan to very soon. This time around i have a food saver and food saver rolls. Instead of buy a bag large enough to fit the pork belly while curing in the fridge i thought i would just make my own bag with the foodsaver.

My question is can i suck the air out of the bag when i seal it? Or do i need room in the bag for the liquid to be pulled out?

I would not vacuum all of the air out, because the cure will draw a lot of moisture. I usually use a 2 gallon ziploc bag.
 
Start sucking the air out but stop before it moves into the food saver. Hit the seal button to stop the vacumn and seal the bag.
