Holy smokes....never again! Cooked a 12.5lb (pre-trim) brisket yesterday and I have never fought my WSM so much in my life! I wanted to go 275 and even with water my WSM has always ran hot....not this time though. Was going at about 235 and I couldn't do anything. Finally lit some lump and threw it in to get temp up....had to do that again about 5 hours later. Just brutal. At one point I was able (successfully) to get the water pan out and put in the foiled clay pot. Brisket was done 10 hours after putting it in and I got rave reviews. Had to foil during the stall though because of time crunch.

Cleaned out the WSM tonight....ash up to the charcoal grate. I couldn't believe how much. Learned my lesson...probably whu you never read about this fuel on here. LOL
