Got a great deal on baby backs a few weeks back. I prefer St. Louis or well trimmed spares but for the price will suffer through these :) Today is supposed to reach a blustery 32F, so doing them on the pellet pooper so I can stay warm inside. Dusted with SPG and will be saucing with Wallyworld's Original mixed with an equal dose of ACV. Busy with some brewing so ribs are taking a back seat to that. Made up some slaw Wednesday to go with. Will post a pic of the finished produce if the old memory works later.

Change of plans. Found some of my sweet & spicy sauce https://tvwbb.com/threads/house-sweet-spicy-sauce.88059/ in the fridge so will be using it. After a couple of beers, decided to do the ribs up right and postpone some of the brewing chores, Will be wrapping with butter, brown sugar and maple syrup. Just passed the 2 hour mark and they definitely need more color so will be another hour before I wrap.

Yum. I prefer baby backs as long as they are small and don't have too much meat on them . Sometimes when you get the loin back ribs there's a ridiculous amount of meat on one end where it's greater than 2-2.5 in thick. It's less of a rib at that point and more of a big chunk of pork loin. It eats fine... Make it kind of hard to cook uniformly.... One end be falling apart off the bone and the other end you got to gnaw off the bone

Didn't remember to take a pic until we did some serious damage to the ribs.

Thick end was perfectly cooked and the thin end was literally fall off the bone. Wife had 5 ribs from the thin end, and I did the rest. Pretty good for baby backs but I still prefer spares.

We are doing ribs next weekend.
I found a nice rack of baby backs for $7 and change today that I couldn’t pass up.
Are the prices going down?

Not around here Andy. They had a bunch that were close to the sell by date. Now they're getting $5.99/lb.
 
The rack of baby backs I got at the Walmart in Sequim Washington was I think less than $3 per pound.
Not the greatest looking rack of ribs but not bad either.
I just couldn’t pass on that price.
7 bucks and change?

They are hard to pass up at that price, regardless of my preference for spares and St. Louis. Just looked at Safeway's ad for this week and they're on the $5 Friday page @ 2 lbs./$5.

Looks like Walmart here has lowered baby backs to $2.98/lb. now. Wondering if they're just not selling due to being ~ twice the price of spares. St. Louis and spares don't appear to have come down in price and I almost never see either on sale. Might need to start working on a go to recipe for BBs :)
