I've only done baby backs on my kettle, and haven't done any since I got my WSM. My plan is to light the cooker with two chimneys of Kingsford, put the meat on about 10:30 so I can either pull the ribs and throw them in a cooler, or have them come off ready to serve around 5:00. I have 9 racks of a little over 2 pounds.

Is this reasonable timing? Will they hold up okay with an hour or so in the cooler? Thanks for the help.

I don't see timing being as much an issue for you as fitting them all in the WSM. Somewhere, somebody says they can fit 14 racks in there, but that's the max I've heard, I think. You'll need some creative rolling, stacking, or racking techniques, but I think it can be done.

Dang John,
You are a good man! 9 racks of BB's! I'd feed em Butt.

Using racks, you can pull it off. Time sounds OK. I have always used the MM. Other way sounds too hard. Good Luck!

I paid $4.19 at Costco, so it's about an $80 cook.

Wife is a little tired of pork butt...had to go to ribs.
