Hi all, back in November, I bought a nice set of Swift BBRibs from Costco, which I brought home and froze. This past Friday, I put them in the fridge to thaw for a Sunday smoke. Unfortunately, I wasn't able to cook 'em up, so they're still sitting in the back of the fridge, still in their Costco wrap. Will they be OK this weekend, after 7 days in the fridge? Thanks!

Are they in cryovac, and were they frozen solid immediately after purchase? Even if so, 7 days is at the outside edge of safety-- not be worth the chance.

It's Thursday. You put them in the fridge on Friday. It took a good two days to thaw so today they've only been out for 4 days. If you can't smoke them during the week, put them in the oven. It's not as good as smoking, but if you put them in the oven at 250 for 4 to 5 hours, they'll still be pretty good to eat. Or you could smoke them today after work and since they'll get done too late for diner, just eat them tomorrow. Again, not the best, but still good eats.
