At least it's a start

DH and I just finished going through the "Make Soon" folder. (which is VERY thick) We managed to get rid of 10 recipes we both decided we didn't want. Not much, but at least it's a good start. It did refresh DH's memory and 7 more made it to the "Make This Week" folder. We shall see. :giggle:

but what are the lucky 7?

we just eat what we have on hand. now mind you i run a substantial pantry, fridge and freezer so we always have a diverse "what's on hand" selection. except when we play eat the freezer. which we're almost done with, again.

Barb and I are switching from our summer mostly grilling recipes to our winter mostly indoor slow cooker, instant pot, CI stove top and lots of soup recipes. Just bought a new digital slow cooker which has a built in timer and temp control. Looking forward to trying that out.
Our weekly menu always has at least two or three new recipes from the "do soon" folder. We plan the next weeks menu on Tuesday or Wednesday so we can make up a grocery list of things we will need for the next week.
Last night we did a Rustic Italian Tortellini Soup for the first time that was fantastic. Tonight, will be Barbecue Pulled Pork and Penne Skillet also a first timer.
We just picked up some bone in chicken breasts on sale for $.99 Lb. so I'll be recipe hunting for a new recipe to try for those. Although I'm sure I have something new to try already.
A while ago we upgraded from a 14 Cf freezer to a 20 Cf Freezer and now that one is already full.

Brett, we had the list of what is in the freezer, and managed to find a few recipes to fit. Like this one for boneless, skinless chicken thighs. I actually made this back in '07. I posted it here in 2019. This is what I posted.

WEBER-This is a recipe made some time ago and we gave it a VERY GOOD rating. I made a notation on the recipe "next time, make sure chicken is cooked longer". lol I'm sure DH knows by now how to check chicken.

Beer-Marinated Chicken Tacos (makes 4 to 6 servings)

Marinade:

1 cup dark Mexican beer
2 TB dark sesame oil
1 TB finely chopped garlic
1 tsp dried oregano
1 tsp kosher salt
1/2 tsp freshly ground black pepper
1/4 tsp cayenne

6 boneless, skinless chicken thighs, about 4 oz each

Guacamole:

2 ripe Haas Avocados
1 TB fresh lime juice
1/4 tsp kosher salt

6 flour or corn tortillas, 6 to 7" in diameter

Marinate thighs for 2 to 4 hrs.

Make guac.

Grill thighs over Direct Medium heat about 8 to 10 minutes, turning once half way through grilling time. Cut thighs into thin strips

Warm tortillas about 1 minute. Fill with chicken and guacamole.

Hey Rich, guess what? THIS finally made it to the "Make This Week" folder. You said you made it 3X and really liked it (but with pineapple preserves) "Chicken Thighs with sweet apricot-hoisin glaze"

Here is a list of the others

#3 Cheesesteak Salad
#4 Hawaiian Pulled Pork Lettuce Wrap (slow-cooker)
#5 Grilled Eggs with Prosciutto and Parmesan (Raichlen)
#6 Oniony Brothy Beans
#7 Colombian Yuca Bread

Yep, that's a good one. I about went crazy trying to find that recipe, thought I would do it one more time before the snow flies.
I forgot that was in a Weber book and not off the internet, spent the last half hour going through the 3000 recipes I have in Word. Finally remembered it was in a book that Barb won Weber's New American Barbecue.
Hope you like it too.
