Not BBQ or Grilling, but I made up another batch of these last night. They are probably my favorite thing in the world to eat. I make them about 3 or 4 times a month.

The liquid is the key. Sake, soy sauce, mirin, oyster sauce, brown sugar, cinnamon stick, ginger, dried chili, star anise, green onions.

1/3 cup sake, 1/3 cup soy, 1/3 cup water, 3 TBS Oyster Sauce, 4 TBS Brown Sugar, 3 TBS Mirin, 4 large thin slices of Ginger, 2 cloves Star Anise, 1 cinnamon stick, as many dried hot chiles as you like and some green onions.

Make sure the soy sauce is "naturally brewed" or you will get a funky taste as it reduces.
