Loin chops are either bone in or boneless chops from the loin. They can be center cut, rib end or sirloin end. Centre cut being the most desirable, and also the most expensive.

Tenderloin is a smaller muscle sometimes attached to the pork chops if left in, other times it is removed and sold seperately. Tenderloin is boneless when removed and also more expensive.

You can sometimes find shoulder blade chops, or butt chops which are chops that are cut from the butt portion of the shoulder.
