Another Use for Leftover Pulled Pork: Papusas!

In order to use up the last of my frozen pulled pork I made a batch of papusas last week. A papusa is a traditional Salvadoran tortilla that is filled with any combination of cheese, refried beans, and a pork paste. You basically make a simple dough by adding 2 cups of Masa(which is a special corn flour) to about 1 1/2 cups of water, and a teaspoon of salt. I poured in the water bit by bit till I had a dough that was able to be formed into a ball. As for the fillings I used quesillo cheese, refried beans, and the BBQ pork. I put the pork into a food processor with a small amount of tomato sauce and pulsed till I had a paste.

Once your papusa if formed simply throw it on the griddle and cook like a pancake. While my first attempt at papusas was not as good as the ones I have had at restaurants it was still good.

Thanks, Phil. That looks like a good way to disguise leftovers (though I may have to fight my wife for some to work with). I'll be trying this soon due to a Boston Butt that needs smoking.

Awesome idea! I love pupusas and have always wondered how to make them. Thanks for the video link. One suggestion though. Pupusas are not complete without the curtido. If you aren't familiar, curtido is a kind of salvadoran pickled slaw made with blanched cabbage, onions and carrots. Usually served on the side or right on top, this stuff adds a crunchy, tangy complement. Kind of like cole slaw on a pulled pork sandwich. Can't wait to try this!
