Another double bone pork chop!

While looking for some inspiration I came across a nice two bone pork chop and several other things which were not overly expensive so, I went headfirst and made myself a hatful of prep work! Made up a brine salt, brown sugar, peppercorns, and some Fines Herbes which someone had gifted me, star anise, let that rest for overnight and proceeded to get on with the rest of the production.
Made up large and small meatballs, baked them off and pulled out the “Vakumar” much more robust than the old bagger.
Bagged up some chicken breasts,
Then after the balls cooled, I bagged them off too? I’m glad to have some things ready for quick prep when the weather gets “funky”.

Butter cooked both the carrots and baby yellow potatoes. The little All Clad pans did a fine job on the kettle, I had considered putting them in the oven but,the kettle was hot anyway!
Turned out very well!
