I decided to do the meatloaf today. I also decided to also smoke 2 london broil and some chicken legs and thighs. I felt that since I was going to do a dry pan smoke today, WSM will be around 350, all these things should do well. Started with the meatloaf, did 2 2 1/2 lb, one on each rack. Tastes really good! Next was the london broil. About 45 minutes, internal temp of 135. no rub, just sea salt and fresh pepper. Wonderful!!! I am doing the chicken now....will let ya know. WSM steady at 350, used minion method to start.
