Afterburner for WSM

I just came across the "Afterburner" gas conversion, available for the WSM. I know using gas is sacrilege for most of you, but once in awhile I think it would be nice to sleep at night without having the temperature fluctuate. How much taste difference is there, and does anyone have any experience with this unit? The website is www.gassmoker.com. I don't want it if I have to take the legs off and put them back on each time. Only if its easy to swap in and out will I consider something like this.

I agree - you don't need gas for long cooks. I used the "normal" method the first time and the Minion method for all the times after that. You can get very long cook times (overnight +) with very stable temperatures.

You can get your nights sleep...buy one of the remote wireless thermometers (Nu-Temp $36 or Wiliams Sonoma $45). Then if the temperature drops during the night's cook or during your favorite football game during the day it will alarm and let you know...

Jst cookd 19 hrs coupl weeknds ago. Made a butt and she came out deelicious!!!

Cookder overnite an jst woke up once to steer tha coals at 12 hrs.

Reckon ya realy donot need gas.
 
I've got the NU-701 remote thermometer, and it's been great. The only thing I don't like is that you can only have it go off it the temp gets too high OR too low, but not both. If I set it for the 'too high' alarm and the temp drops instead of climbs, now what? Has anyone figured out a workaround for this?
 
At a recent competition, the team next to me had done the Brinkmann water pan conversion to their WSMs. Even though it was a competition, they were completely confident enough to sleep for five hours without worry.

I couldn't have done it, but I tend to fret more than necessary anyway.

Moral of the story: There's a lot of less expensive options to get a consistent overnight cook than a gas conversion.
 
Gas is for people who eat too many beans. In my opinion there are 3 key's too cooking long term on the WSM
1. Brinkman water pan.
2. Minion method.
3. Wind control.
I think that about sums it up.
