advice on freezing pulled pork

I smoked 4 pork butts Mr. Brown-style this weekend, they were ready (and tasty!) by Sunday afternoon. I'm saving most of it for a party this Saturday night - right now it's in the fridge in 2 casserole-type trays wrapped in tin foil.

Anyone have advice about whether I should freeze this now and thaw it on Saturday? Or since it's already been in the fridge for 2 days should I just leave it there? Thanks!
 
Thanks Glenn. Any advice on re-heating in oven vs. in the smoker? I'd guess I have about 10 lbs of meat, which I'd like to warm up in maybe 3-4 shifts.

No problem Matt.

Oven at 250-300. Smoker adds nothing for reheating IMO, unless it's up and running when your ready.
 
matt, if you have it in small portions in ZL bags, put them in hot water on your stove top.
I freeze butt all the time and it is simply thawed by setting them in a pan of near boiling water.
or simmer them if you're not in a hurry.
 
Well, Saturday I'll have the smoker going for a couple of tri-tips. I was thinking of putting cheap aluminim trays with the pork on (after the tri-tips are done) i.e. at around 300 degrees, and spritzing with apple juice / beer. Dumb idea? I'm curious how long it might take to heat and/or if the oak would overpower the pork. Thanks again!
 
When i reheated my pulled pork last time i made a broth and tossed the PP inside the pot for a few min...WAS GREAT...the left overs i even freezed with the broth in the same bag.

Havent tryed the frozen one yet but im sure its an perfect way to reheat.

I freeze all the time. One of the things I do is package it into FoodSaver bags and vacuum. Before placing in the fridge I put it in my sink which is about 70% ice, 30% water and some salt. This cools the meat down quickly getting it past the danger zone of bacteria development. After 30 - 60 minutes in the bath I can get it in the freezer and it's frozen on the outside within 2 hours of pullin.

For reheating you can defrost in the fridge overnight, or try the water bath, I've even had acceptable results putting the frozen packs in the microwave and defrosting at 10% power.
 
i pretty much do the same thing as brad. i recently purchased a new foodsaver v2060 from ebay for about $50cad including shipping. i smoked a 9# pork butt today (actually just took it out of the smoker and it is resting) and will be portioning all of it out to my friends and some for my dad's lunch at work tomorrow.
 
Thanks to you all for the advice! Reheating the pork worked perfectly - I let it defrost in the fridge and then warmed it up in the oven at 250 with some broth (half chicken broth and half apple juice), and then kept it warm in a crock pot. 3 pork butts and 4 tri-tips fed 50 people with plenty to spare!
