ABT's on WSM
I am going to make some ABT's with the little smokies this batch.... Can these be done on lower rack of a 22.5"? I will be doing St Louis Ribs on top rack; expect to cook at about 225-250 max.... will the bacon get done at that temp on lower rack? and suggestions welcomed.. How long should I allow for cook time for them?

Chris... I will get the hang of forum categories soon; I promise

Ralph,

I would cook them @ higher temps to crisp the bacon. I've used the top rack on the WSM and I've used the kettle to grill them. They don't take long at higher temps and will certainly take less time than the ribs. You could do the ribs 1st, then crank the heat up (open the vents) and cook the ABTs on top.

Thanks Paul, I wonder about using an empty waterpan and just using the top grate... 300* or so? (excluding ribs; just ABT's)

I made them on the bottom rack while I had ribs and moink balls on the top. No problems at low temps, just took a little longer than an hour.
