At 4:05 look at how lose/floppy that briskets is! I have never seen one do that. Wonder if that's what happens when you trim a lot or get prime.

Excellent video! Thanks for sharing. I really enjoyed watching the video. I've done quite a few briskets on my WSM. I prefer the foil low and slow method. It was great to see that they did a wrap test!
