At what point is cracked black pepper added to the pork belly? During the cure, during pellicle formation, after the cure before smoking??? When?

Assuming that your intent is to make a "peppered" bacon, you would add the cracked black pepper after curing, before pellicle formation and smoking. I've got some canadian bacon that I'll be smoking today, and I'm doing just that now. Removed from the cured, rinsed thoroughly, patted dry with towels, seasoning applied, and now doing the pellicle step.

Cure then dry. Add black pepper and allow to set for pellicle formation. Then smoke. Simple. THX.
