A perfect day for smoking !!!


 
Louisville weather from Weather.com

Showers and thunderstorms continuing through midnight. Mostly cloudy and windy. Temperatures steady near 66F. Winds SSE at 15 to 20 mph.

Got three racks of babybacks and 1 rack of spare ribs.

Against my better judgment, I'm going to try a higher heat method of 275 (instead of my normal 225).

(BTW, I should point out that I'm kind of here under false pretenses as I don't have a Weber Smoker, but instead, am using a Smoky Mountain gas smoker.

BUT, seeing as how this is the best Smoker's forum that I have found, hopefully you all won't hold this against me and will allow me to stay and learn some new tricks and techniques

Dave don't sweat it. Every time I go to fire up the smoker the wearther goes to &$!#!!!!! I have some breated hot wings burn up on mine as I type. Good luck with your cook. Vince

Mother Nature 1 - Dave 0 !

had the ribs on the smoker for about a half hour before a torrential rain and very strong winds came through. I'm talking Caddyshack type rain.

Ended up yanking them out of the smoker and baking them in the oven

It's all good as far as the gas smoker thing, Dave. Fair warning though, if you hang around here too long, before you know it you'll have a WSM...then a kettle...then a Performer...then you'll start searching Craigslist every day...before you know it you'll be a "collector".

Funny thing is that I've been seriously considering switching over to charcoal for about a year now but just haven't pulled the trigger on it.

Almost bought what looks to be a Perfomer off of Craigslist last week but then decided not to.

That looks to be a one touch platinum. I would hold out for a performer if you can. I believe it’s worth the extra money.

I love my Platinum and wouldn't trade it for a Performer if I had the chance. That may sound crazy but I like the simplicity of it. I also like starting the charcoal in the chimney and doubt I would use the gas starter on the Performer even if I had one.
