Did my first eye of round and first fatty in the same cook a while back. The idea for the eye of round was to cool and slice thin for roast beef sandwiches. It was pretty tasty right off the smoker so I ate some then too

The fatty was spicy ground pork stuffed with cheese, green/red peppers, & onions then wrapped in the bacon weave & seasoned w/ rub.

The fatty is probably the nicest looking one with the latticed bacon that I've seen and I KNOW it tasted even better!!!!!! WOW!

Nice looking cook. I am trying my first fatty tomorrow. Yours looks perfect. Mine is in the fridge and ready to go but it took me a bit to get it done right. Looks like you got it down perfect!

Thanks guys. Gary - It took me a few times to get the fatty rolled correctly so the pics don't show those flubs. I had too much stuffing so when I tried rolling, the pork would split open and I had to start over. That got me thinking... would putting the flattened pork in the freezer a few minutes somewhat prevent it from splitting? I suppose I could've tried not flattening it so thin too...
 
Nice looking cook. I think I want to try making fatties. Seems like something fairly simple to add when making other stuff on the wsm. I like the idea of making beef sandwiches as well! Great looking food. Vince B

I did both the fatty and eye in the same cook, 260 degree range. Cooked the eye til 135 internal and the fatty to 165. Both hit those temps within 10 minutes of one another. Going higher heat wouldn't be a problem at all with the eye I don't believe, pretty lean cut.
