Found a recipe for a John Wayne Casserole and decided to give it a try. Although no Weber’s were involved. It was actually pretty good and easy to make.
Recipe below.



Next up was a pork steak and chop that I marinated for 8 hours and cooked it up on the E320. Sides were a smasher red potato and Barb grilled up some asparagus. Came out really good.

John Wayne Casserole Recipe

Ingredients

1.5 pounds ground beef
1 oz Taco seasoning
1 cup water
20 oz Rotel Diced Tomatoes and Green Chilis 2 cans, drained
15 oz Corn Drained
1 Green Pepper Diced
3 cups Bisquick
1 cup water
1 cup sour cream
1 cup mayonnaise
2 tbsp Onion powder
1 tsp salt
3 cups Cheddar Cheese Shredded





Instructions

Preheat Oven to 325 degrees
Brown ground beef in a large pan over medium heat. Break up the ground beef as it cooks
Remove the ground beef and drain the grease from the pan. Add the ground beef back into the pan and top with taco seasoning and add in 1 cup of water.
Simmer for 5 minutes. Add in the Rotel, Green Pepper, and Corn and mix into the ground beef.
Combine Bisquick Baking Mix and Water and stir until a dough ball forms.
Grease a 9x13 pan with nonstick spray. Spread Bisquick dough out evenly into the pan.
Combine sour cream, mayonnaise, onion powder, and salt in a bowl and mix together. Set to the side
Pour ground beef mixture over the bisquick dough and spread evenly. Spread sour cream mayo mixture over the beef mixture evenly. Top with cheddar cheese.
Place casserole dish on top of a baking sheet with sides and bake for 40 minutes. Remove casserole from the oven and allow to sit for a few minutes before serving.
 
That John Wayne Caserole looks pretty good pilgrim ;) Sort of like a shepards pie with a southwestern flare and a bready topping instead of mashed potatoes right?

Actually, the bisquick goes on the bottom of the pan then the meat mixture goes in then the sour cream and cheese is on the top. It was a fun cook.
 
Looks great, Rich. Gonna definitely give that casserole a try. Beef prices where they are, we're eating a lot of chicken and ground beef, so another way to cook it is great.
