After weeding, and prepping all my flower beds, removing two bushes the winter took, moving and splitting most of my hostas, trimming and cutting the grass I decided it was time to kick back and cook.
I pulled out the smoker for the first time this year and dropped in a few beer can yard birds.
It was the first time I cooked yard bird in the WSM, but it's not going to be the last. It was the juiciest chickens I've ever made.
I also had the Performer out and made some monkey bread to keep me happy while I was smoking.
For the chickens I just did a basic dry rub. I set up the smoker with water in the pan, about a third the charcoals I'd normally use, and a few lumps of pecan.
I kept the temp at about 300 and was happy with how the WSM is holding temp now.
I shredded the chicken and had a little for dinner, but most of it is going to be turned into chicken salad and chicken soup.
