A Connecticut Costco Question


 
At Costco today they wanted $4.89/lb for prime packers. Only had a couple, both with huge fat caps. I might have picked one up but I knew there was no room in the fridge. Instead I scored with the brats that didn't sell for Independence Day. They were clearing them out for $2.97 for a 3.5lb package. I still have some in the freezer from last year but I couldn't resist grabbing a couple packages.
 
Go buy a trimmed brisket and then complain about paying for fat. I save it and used it for either tallow or to add to sausage. If part of the flat is too thin trim it off and grind it for burgers. My butcher also buys carcasses so he's coming out cheaper than most other places for meat. The problem is there's only 2 briskets per cow.
