Ok, so it was a bit lonely on there but I wanted to try a chuck on the smoker for the first time.

Seasoned with a bit of Montreal:

Will definitely do this again I've always put the chuck in the oven but this was REALLY good. 75 degrees, Buffett from Nissan on Radio Margaritavlle, life is good...

That roast looks great. Besides the Montreal and onions, what else did you use, and what temps? I'm always on the lookout for a great roast, so I appreciate any help. Happy Labor Day, and thanks!
 
Just the Montreal and onions. My girl's tastes are pretty plain-jane so when cooking for them I usually go real basic. The meat stood on it's own.

I had it at 240-260, 2 or so hours nekkie then 5 or so hours in the pan with the onions and juice I didn't add any liquid it made a boat load of it's own.
 
Looks good Tim, nice and basic. I've been telling myself, next time I do chuck it's going to be on the WSM.
