$6.99 ribeyes!

Found a family pack of CAB ribeyes at a local grocery for $6.99/lb. This is about half what they would cost @ Kroger or Publix, and these Choice Angus ribeyes are hand cut and better than either of those stores. Since the weather was really nice today, I decided to grill them up for dinner tonight. Today's high was 54° and it was still in the 40's at dinner time, so why not grill something delicious? Not feeling grilling on Monday night, when the projected low is supposed to be 17°. :(

Seasoned with kosher salt, cracked black pepper & granulated garlic. Let 'em rest for 30 minutes while I fired up the Performer.

Started 3/4 chimney of RO lump with one hickory chunk for flavor. I'd say the grate temp is high enough for a good sear.

Started the steaks indirect and let them take on a little smoke.

Seared direct for 3 minutes on each side. Looking good!

Let 'em rest for five minutes and temped with the Thermapen. Looks darn close to a good medium rare.

Plated with a baker and a side of baby romaine with some balsamic vinaigrette. Asked my wife if she wanted bread, and she said, "Why? I'm not sure you could make this any better with bread."
