35 lbs. of Pork Butt Now On The WSM


 
Lew, I am in awe. Looks soooo good! I can't wait to get there (though I'm not sure I'm ready for so much less sleep). I'm starting to buy some Pork butts for a big bbq, but need to get stuff dialed in first (as my WSM just arrived today) Congrats and thanks for the post!!!
 
Awesome job Lew, your post is freaking me out though. About to do 3 - 9 lb. butts for about 35 people tomorrow. Throwing them on at about 2 am, hoping the timing works out, dinner is around 6. I do mine at a higher temp though and usually works out at about 1.5 hours per pound. The last cook threw me off though. 2 - 8 pounders, one was done in 8 hours, the other at 12, same weight, one 4 hours quicker. I am ready for almost anything now though so I am good to go (hope the BBQ Gods don't punish me for that).
 
Jeff had posted that he wanted to see how the story ended so here's a postscript:

We put the pork in 5 disposable foil pans, added some apple juice, foiled the pans, and heated it on the clubs huge grill. We had a lot of people not show up at the picnic today so I had to bring home some of the pork for my small family. Shucks.

The head cook told me he had been worried about me over smoking the meat but when he tasted the bark he loved it. In June he had told me he wouldn't take others word for it that I did good pulled pork so I wouldn't get a passing mark until he tasted it. He ate at least a half pound and probably more. All without sauce. I passed.

Folks were very complimentary of the taste so the cook was a success. This just proves that the WSM can make a mediocre cook look great.

Something of note: The thunderstorm hit just after my cook and I didn't clean anything up yesterday. This afternoon I checked the Brinkmann charcoal pan for water level. After 20 hours at about 230 degrees I still had about 25% of the water remaining. I'm shocked.

Whupps! I've NEVER injected a butt or anything. Food Giant's got some kind injector kit that I'm gonna get and try that.

No problem Charles. Dave Russell pointed out that the inject is salty and my wife, who likes salt and my daughter, who uses very little salt, both noticed the difference on their first taste. Both said to use the inject in the future. They both got a cheery Aye Aye.
