Looking to do a low labor cook for dinner. Babybacks got the vote.

About to put them up. Can’t stand being outside with this humidity.

I like the use of those baskets not sure I've seen that before it's a great idea
I’ve done this a few times now. The WSK is very fuel efficient so from experience, I know that filling the lower coal grate with a lot of briqs is a waste of briqs and is just more work on the next cook reset. I reuse unspent fuel so the less fuel I have in the hopper, the less there is to clean up later.

I just foiled the ribs with some sauce and ACV. Doing two with TJs Carolina Gold and one with Kinders mild.

Hope to be done in 30 minutes or so; say 6p.

Phone was backing up so a slight delay in pic posting. Used the wife’s phone for these 😍

First off, the pomegranates are doing well!

More hardware pics, sez I. Show me the oil on paper towels setup before lighting!

😍
Oil, on dinner napkins that people leave at their seat in my house. And or used wet paper towels that have dried. Put some cheap cooking oil or residual bacon grease inside them and use a small torch to light the “wicks.” Around 20 minutes later you have a good fire for smoking.

Does it work with JD lump? We have a 2 burner outdoor range that I've been using with a chimney, but I'm always open to new ideas. When I've used newspaper under a chimney many, many, many years ago, i always seemed to have paper ash flying about the yard...not good.

I use this wick method with JD in a chimney. I’ve done this same wick method with JD in the charcoal baskets and it takes too long to get all the coals hot.

Todays cook was mostly KPro briqs with some semi-used JD in the pile. Because I used briqs today and only needed a few coals lit, this in charcoal baskets method works well.

I pretty much use JD for direct heat cooking as in searing and then moved to indirect.

On all low and slow cooks, in my WSK, with the heat diffuser plate, I use briqs of some sort.
