2nd Smoke, Pork Loin

I smoked a 9 lb Pork loin tonight for some friend coming over. Used Dillo dust for one side and a home made rub consisting of onion powder, garlic powder, salt & pepper for the other. 2 blocks each of cherry and apple, Pit temp @ 245 until IT of 140 (ended up being about 2hrs 15 min), aluminum foil wrapped and put them in a cooler, covered with towels to rest for 45 min. Unbelievable!!!! Also was the first run of my DigiQ DX2, great piece of equipment. Now if UPSP would hurry up and get my Mav 733 delivered.

If you are wondering how far off your dome thermometer is here is a little proof. Dome is at about 190-195, DigiQ is showing 212. It got worse the higher the temp went. During the warm up the DigiQ read 265 and the dome was 205.
